I made these on Easter morning for our family brunch, and they were a huge hit. The only drawback is that they don’t keep as well as regular buns, so you’ll have to eat them fairly quickly.
Yeast-Free Hot Cross Buns
1/2 cup warm water (100-110 degrees Fahrenheit)
1 1/2 teaspoons active dry yeast (one packet)
1 1/2 teaspoons granulated sugar
1/2 cup brown rice flour**
1 tablespoon potato starch**

Ingredients:
250g plain flour
1 teaspoon baking powder
2 teaspoons cinnamon
50g currants (or raisins)
50g sultanas (or raisins)
Method:
Preheat oven to 200C/180C fan/400F/Gas Mark 6. Line a baking sheet with greaseproof paper or a silicone mat. In a large bowl, mix together the dry ingredients until well combined. Add the wet ingredients and form into 12 balls roughly the same size as tennis balls (you may need to use your hands). Place on prepared baking sheet, allowing room between each bun so they don’t stick together during cooking. Bake in preheated oven for 15 minutes until golden brown and firm to touch (check with tip of knife). Remove from oven and leave on

Yeast Free Hot Cross Buns
Makes 12 buns
Ingredients:
1/2 cup coconut flour (30 g)
1/4 tsp baking powder
1/4 tsp salt
3 tbsp maple syrup or honey (42 g)
1/2 cup water (120 ml)
- Dissolve the sugar and yeast in the warm water. Cover with cling wrap and leave to sit for 10 minutes or until frothy.
- Add the flour, bicarb and salt to a large bowl and mix well. Make a well in the centre of the flour and pour in the yeast mixture. Use your hands to mix together until it forms a dough (it will be quite sticky).
- Knead for 5-10 minutes or until smooth and elastic then put back into the bowl, cover with cling wrap and leave to rest for 1 hour or until doubled in size.
- Line two baking trays with baking paper and set aside for later use. Roll out your dough into about 40 small balls (about 3cm across), place them on one of your prepared trays and cover with a clean tea towel so they don’t dry out whilst waiting for your ovens to heat up (about 30 minutes).
- Preheat ovens to 190°C/170°C fan forced then bake buns for 15 minutes (or until golden brown). Remove from oven and while still hot, brush them with a mixture of melted butter mixed with lemon juice then return to oven for another 5 minutes or until glistening gold
