  • 0.25  kg Mung Beans or Lentils
  • 4 cloves Minced garlic
  • 1 tbsp Minced onion
  • 1 tbsp Minced peeled ginger
  • 2 cups Eggplant slices
  • 0.5 kg Chicken breast chopped
  • 2 cup Malunggay Leaves or Spinach Leaves
  • 2 cup Water


  • Boil your monggo beans until it is cooked and soft.
  • In a pan sautee ginger, garlic, onions till translucent, then add chicken
  • Add your monggo beans that are cooked then add water bring it to a boil.
  • Add your eggplant till soft and tender, salt and pepper to taste
  • Add your malunggay leaves and ready to serve.



You can add more vegetables if you like, You can pair this with boiled potatoes or white rice. Add chicharon on top if you like.
