Beef & Broccoli
1 pound beef (flank steak, strip steak, etc.), cut into thin strips
2 tablespoons olive oil
2 cloves garlic, minced or pressed
1/2 teaspoon salt
1/2 cup soy sauce (reduced sodium is best)
1 tablespoon sesame oil
1 cup carrots (about 3 medium), sliced diagonally into 1/4-inch thick slices
1 head broccoli, cut into bite-sized pieces Heat a large skillet over high heat. Add 2 tablespoons olive oil and swirl to coat the pan. Add the beef and cook until browned on all sides, about 5 minutes. Remove from the pan and set aside. Add another tablespoon of olive oil along with the garlic and cook for 30 seconds until fragrant. Stir in 1/4 teaspoon salt and cook for another minute until fragrant again. Stir in 1 cup water plus soy sauce and sesame oil; bring to a boil then reduce heat to medium-low so that it simmers gently but actively while you prepare the broccoli. When broccoli has softened slightly but still retains its shape, add it to the pan along with any accumulated juices from its package; stir well then cover tightly
