Spicy Ranch Dressing: Mix 1/2 cup mayonnaise, 1/2 cup buttermilk and 1 tablespoon chopped pickled jalapeños in a blender until smooth. Add 2 tablespoons chopped green onions and blend again until combined. Season with salt and pepper, if desired. Serve immediately or refrigerate in an airtight container for up to 1 week. Makes about 2 cups (480 ml).
Curried Chicken Salad Sandwiches
Curried Chicken Salad Sandwiches: Combine 1 cup shredded rotisserie chicken, 1/2 cup mayonnaise, 1/2 teaspoon curry powder and salt and pepper to taste in a small bowl; set aside. Spread 1 tablespoon prepared pesto onto each slice of whole wheat bread; top one slice with chicken salad and another slice of whole wheat bread. Cut into four pieces each; serve immediately or wrap individually in plastic wrap for later use
